Finding. Extra Virgin Vault applies this label when the latest listed release records more than 500 mg/kg (or equivalent metric) total phenols. These oils often have a more pronounced bitter and peppery character.

Method. The label uses the catalog's latest-release total-phenol field rather than a ranking of every historical test. Analytical methods have not been harmonised across producers.

Limitation. A total-phenol result is a chemistry descriptor, not proof that an oil qualifies for the EU-authorised olive-oil polyphenol wording. That assessment requires the relevant hydroxytyrosol-plus-derivatives measurement. This listing does not duplicate pooled catalog figures, which change as records are added.
