Each chart uses the releases with that particular date. Harvest periods span their reported days. Availability means the first time we recorded a release for sale. A sold-out date marks an observed status, with extra uncertainty noted below. These are observations from this catalogue, not a census of the market.
Current dated sample: 480 northern and 137 southern harvest releases; 97 northern and 210 southern first-available releases; 59 northern and 126 southern observed sell-outs.

What the catalogue showed at month end
These historical snapshots come from committed oil records. Available share describes the catalogue's known range status, not market supply. Price is the median USD per litre for releases first recorded available in that month, using the price in that month's final Git snapshot. Oils sold out by month end can still contribute to the price cohort.

The calendar-month average gives each qualifying year equal weight (for example, June 2025 and June 2026). A month appears only with at least two years, each meeting the 15-oil threshold. Gaps mean the sample is insufficient.
USD conversion uses the rate recorded in Git, or a dated ECB reference rate backfilled through Frankfurter for earlier snapshots. Display currency follows the site selector and uses today’s rate for display only.

Method and limits
- Month plots require at least 15 dated releases in a hemisphere and selected year. Each release contributes one unit; a harvest range spreads that unit across its days. Missing dates are never filled in.
- Calendar year means the actual year of an event, even if the release is from an earlier harvest. The all-years plot combines recorded events across years; its sample mix changes over time.
- Availability is first observed on the producer site. Sold out* may be observed late or overwritten by a later transition, and a missing sold-out date is unknown. The sold-out plot does not describe a complete shelf-life window.
- Git snapshots show the last committed state in each completed UTC month, beginning April 2025. The current incomplete month is held back until it closes. Stock is an oil-level range flag. The price cohort contains releases whose recorded first-available date falls in that month and whose price and currency were present in the month's final snapshot. This is a month-end observation, not a verified price on the exact release day. A price without a historical exchange rate is excluded.
- The average by calendar month is an equal-weight mean of eligible year-specific available shares or new-release price medians. It requires at least two qualifying years for each month and hemisphere; each year-specific cohort must contain at least 15 oils. It is not a pooled oil-level average.
- Historical USD prices use the rate file committed by the snapshot from February 2026 onward; its file commit date is shown in the table. Earlier snapshots use Frankfurter’s ECB-based historical rates for the UTC snapshot date, or its most recent earlier published day when the market was closed; the published rate date is shown. Unsupported currencies are excluded. The displayed currency conversion uses the site’s current rate, not the exchange rate a buyer would have received then. Prices exclude any unrecorded tax, shipping or discounts.
- Availability and price patterns in this selected catalogue cannot establish a market shortage or a price premium caused by release timing.
