Adelaide Hills is a cool, elevated corner of South Australia where olives ripen slowly, producing aromatic, vividly green extra virgin olive oils with lively bitterness and a peppery snap. The region skews to earlier harvests (peak in June), which, together with the climate, tends to create medium-to-robust styles with solid phenolics and fresh herbaceous character. Small in scale but quality conscious, it features both classic Mediterranean cultivars and a few niche Australian plantings, with a market that ranges from value everyday oils to limited olio nuovo releases.
