Uljara Sveti Ivan

Uljara Sveti Ivan is an olive‑oil producer based in Vodice, Croatia, specialising in premium organic extra‑virgin olive oils that carry HALAL, EU organic and the Croatian quality mark. The estate cultivates mainly the Oblica variety – which makes up about 80 % of its groves – and harvests the fruit by hand in the early morning, choosing the ripeness that best suits the desired flavour profile. Harvested olives are processed within a few hours in a Rapanelli cold‑press mill, with temperatures kept below 27 °C, and the oil is stored at 16‑18 °C in stainless‑steel tanks under inert gas before bottling. Their focus on traditional, low‑impact methods and strict quality control has earned them numerous international awards.
