Salut Oliva, based in Boort, Victoria, Australia, is a family-run producer established by Marlies and Peter Eicher. Their groves in the Sunraysia region utilise organic methods, avoiding synthetic inputs to maintain ecological balance. Harvested annually, olives are pressed using modern equipment to ensure freshness, with the 2024 EVOO selling out within weeks of its July release. Certified by NASAA, Salut Oliva emphasises traceability and quality control throughout production. Products are distributed online and through selected stockists, with the 2025 EVOO harvest scheduled for availability from July 2025.
