Ramona Valley Olive Oil (RVOO) operate a single estate olive grove in Ramona, California, where olives are grown and hand pruned for in the Ramona Valley. Certified organic by the CCOF since 2024, the operation focuses on sustainable practices to produce EVOO. Olives are harvested at optimal ripeness, milled onsite within two hours of picking, and bottled directly to maintain freshness and polyphenol levels, verified through independent lab tests. For Italian varieties like Cocchia, the process follows Olio Nuevo methods, involving cold processing of green olives for better health attributes and stronger flavour. Spanish varieties such as Calderón undergo similar procedures to ensure consistent standards.
