After consulting a local Italian master miller, they revived the ancient trees through land nurturing and careful management, leading to the first harvest that launched the company. The orchard's olives are hand harvested and milled within hours to preserve freshness and reported chemistry. Production focuses on EVOO, including estate blends and fused oils, alongside balsamic vinegars aged up to 18 years.
