The fifth variety, Pendolino, serves as a pollinator. Each harvest, the oils are pressed separately to preserve distinct characteristics influenced by the region’s hot summers, cool winters, and seasonal weather patterns. Owners Stephen and Vivienne, qualified olive oil sommeliers from San Francisco, oversee production stages to prioritise quality and freshness, ensuring optimal health benefits and sensory attributes. The oils feature annually in the Official Index of the World’s Best Olive Oils, with five consecutive gold medals at the New York International Olive Oil Competition (2019–2023).
