Kristofola

Kristofola produces premium extra virgin olive oil from the heart of Istria in Croatia, with groves in Bale. They started planting in 2000, adding around 200 autochthonous Buža olive trees each year, and now care for 2500 trees across more than 20 years. Olives are hand-picked using rakes and nets, then processed within six hours at the modern Grubić oil mill to preserve quality and high polyphenol levels. Their approach respects tradition while using advanced technology to highlight Istria's ideal terroir and create healthy, top-quality oil.
