Ipša, located in Livade, Istria, Croatia, is a family-run boutique winery and olive estate owned by Klaudio and Irena Ipša. After more than half a century, olive oil production has returned to the family estate, surrounded by ancient Istrian terraces. The estate also produces wine, with vineyards spanning Ipša, Oprtalj, and Santa Elena—one of the highest vineyards in Istria. They focus on ecologically and organically produced mono-cultivar oils like Frantoio, Leccino, and Istrian Bjelica, as well as the harmonious Selekcija blend. Their philosophy centres on excellence, delivering rich, fruity flavours that reflect the local terroir.

Klaudio Ipša first started as a truffle hunter before discovering his passion for olive growing and viticulture. At the beginning of the century, Klaudio and Irena became olive oil producers, and today the family operates one of the world's most modern olive mills, situated right on the estate. The mill is split over two levels, with the olive reception area completely separated from production. The process runs at carefully controlled temperatures—olives are even washed in chilled water to preserve the oil's aroma and bitterness notes.

The estate also produces Malvasia, Pinot Gris, Refosco, and Teran wines, all macerated varieties that can be tasted alongside their olive oils. Visitors are welcomed onto a sunlit tasting terrace with panoramic views across the Istrian countryside, looking out toward Motovun and the forests that are one of the world's most important white-truffle habitats.
