Chiavalon, run by OPG Chiavalon Sandi, produces extra virgin olive oils in Vodnjan, Istria, Croatia, at altitudes of 80 to 180 metres above sea level. Founded by Sandi Chiavalon after he began tending his family's olive grove at age 14, the estate is now run by brothers Sandi and Tedi Chiavalon. They cultivate local olive varieties like Vodnjan Buža, Crnica, Istarska Bijelica, and Rožinjola for blends including organic and early harvest options. Their 2025 harvest oils, such as Atilio, Mlado, and Organic, are now available through their online shop.

The estate has gained international recognition, winning a Gold Award at the New York International Olive Oil Competition (NYIOOC) for their ExAlbis extra virgin olive oil from the 2024 harvest. Ex Albis is a blend of four to five indigenous Istrian varieties including Buža and Leccino, harvested early for maximum polyphenols and freshness. Atilio uses Carbonazza and Istrian Bianchera varieties, while the name "Ex Albis" refers to their highest quality tier.

Chiavalon has also been recognised for their olive oil hospitality, winning Best European Hospitality 2025 at the prestigious Premio Il Magnifico awards, dedicated to top extra virgin olive oil producers in Europe. Farming practices emphasise certified organic production, manual and pneumatic harvesting, and Istrian origin guarantees.
