Chacewater Winery & Olive Mill is a family operation in Kelseyville, California, producing small-batch extra virgin olive oil from select estates. Established to share the wine country lifestyle with visitors and members, the mill sources olives from certified organic vineyards and groves, verified by California Certified Organic Farmers. The operation cultivates Tuscan olive cultivars including Frantoio, Leccino, Pendolino and Mission varieties across their orchards.

Olives are hand-picked into chest buckets to keep them ultra-clean off the ground, then processed using a Pieralisi Hammer Mill—a top-line Italian-made commercial olive mill designed to produce superior small production extra virgin olive oils with an exceptional taste profile. The resulting oils are certified by the California Olive Oil Council, with each year's freshly milled EVOO independently analysed and certified.

The facility maintains organic practices across its winery, olive mill, vineyards, and olive groves to support sustainable agriculture. Chacewater's oils have received numerous Gold medal awards at the Los Angeles International Olive Oil Competition, with their Tuscan Blend winning Best of Show and Best of Class. The operation has recently expanded by planting 520 new Mission olive varietals in a newly developed 20-acre parcel adjacent to the existing olive orchard, with plans to plant an additional 1500 new olive trees in the coming years to meet growing demand for their organically grown oils.

The estate features a tasting room open daily from 11am to 5pm, where visitors can sample an extensive range of locally sourced oils and balsamic vinegars. Accommodation is available at the Chacewater Farmhouse for those wishing to extend their visit.
