They grow five olive varieties—Coratina, Leccino, Frantoio, Picholine, and Picual—using sustainable practices and organic principles where possible. Olives are harvested, pressed, and bottled on-site, with each variety processed separately to highlight its unique flavor profile. The estate also supports biodiversity with native plants, a vegetable garden, and grazing cattle.
