
Campodonico Olive Farm
Campodonico Olive Farm operates on nine and a half acres in Big Valley, Lake County, California, cultivating six Tuscan olive varieties including Coratina, Frantoio, Leccino, Moraiolo, Pendolino and Maurino. The farm holds both COOC Extra Virgin and CCOF Organic certifications, producing pesticide-free oil from organically managed soil and trees. Their harvest strategy ensures olives are picked when green and purple for a slight polyphenol kick, whilst balancing the flavour profile of bitter pungency and fruity notes. Most of the polyphenols are driven from their carefully selected cultivars - Each variety serves specific purposes: Coratina and Frantoio provide high oil content, Leccino offers sweet fruitiness, Moraiolo contributes complexity, whilst Pendolino and Maurino act as pollinators. Fruit is processed within 24 hours of harvest using state-of-the-art centrifugal extraction equipment at a certified organic facility to preserve freshness and maintain hygiene.
