Calistoga Press was established in 2014 when the owners purchased a small vineyard encircled by olive trees at the north end of Napa Valley, adjacent to the Silverado Trail. The property features 125 hand-tended olive trees that produce under 100 gallons of certified extra virgin olive oil annually from Manzanillo olives - but they have added a dozen or so Italian varietals in recent years. In the early days they shared their oil among family and friends and they began selling it in 2019, harvesting every year since then.

The olives are harvested whilst mostly green to create a gold medal-winning oil that is rich in flavour and polyphenols, featuring a creamy, fruit-forward style with a robust, peppery finish. The sun-drenched grove represents a rare olive oil production operation within Napa Valley, combining traditional hand-harvesting methods with careful attention to timing for optimal quality. The resulting extra virgin olive oil showcases the distinctive characteristics of the Manzanillo variety grown in this premium California location.
