The majority of olives are pressed into Extra Virgin Olive Oil, rigorously tested for quality and boasting high polyphenol levels for health benefits, while some are crafted agrumato-style by crushing them with fresh fruit or organic garlic to produce flavoured oils that are particularly popular at markets. Additionally, some olives are hand-picked and cured before being presented in brine, vinegar, or oil, plain or marinated with herbs and spices.
