Made from Manzanillo olives grown on Shodoshima Island in Kagawa Prefecture, this organic extra virgin oil was harvested on 30 October 2025 and cold-pressed the following day at under 26°C. The green, unripe fruit gives a mild sweetness reminiscent of green apple, followed by a clean, peppery pungency at the back of the throat. With a low oil yield of around 3%, it is a relatively scarce single-variety oil from a small organic grove.
