"This 2026 Picual from northwest Victoria shows a distinctly ripe, savoury profile rather than an overtly green one. The aroma is dominated by tomato, particularly dried or sun-dried tomato skin, alongside ripe black olive and soft olive flesh. There is only a faint suggestion of greener character underneath. On the palate, the oil is rounded and fresh, with the ripe olive and savoury tomato-skin notes carrying through clearly. Bitterness is low, while pungency sits around medium and builds gradually toward the back of the throat with repeated tasting. The texture has a noticeably buttery quality, giving the oil a softer, fuller impression than its bitterness would suggest. The finish is very long, with the savoury ripe-olive character and gentle peppery heat lingering well after swallowing. Overall, it is a smooth, ripe-fruited Picual with restrained bitterness, moderate building pungency and a distinctive combination of black olive, olive flesh and dried tomato skin."
