"This South Australian olive oil is yellow-gold with only a slight green tint. The aroma is intense, around 8/10, with fresh-cut grass, mint, eucalyptus and a faint white-blossom note. It is light and fluid on the palate, with moderate bitterness and medium high pungency, producing a two cough finish. The finish is clean and short to medium, with bitterness lingering longest. Fresh and defect free, it is mostly balanced, though the bitterness sits slightly ahead of the fruitiness."
Wild Harvest Burgundy Extra Virgin Olive Oil is made from early-picked Manzanillo olives, grown biodynamically on the Fleurieu Peninsula in South Australia. This is the producer's second harvest, with purple olives pressed quickly after picking and left unfiltered to preserve their vibrant, natural character.
The 2025 Burgundy release opens with fragrant aromas of fresh-cut grass and wild spring flowers. It's described as having lively notes of roquette and radicchio, balanced by a pleasant, lingering pungency.
