The 2026 Tasmanian harvest was heavily reduced after a Sudden Stratospheric Warming event during flowering, with Wattle Hill's crop around 20% of the previous year. Fruit quality was exceptional: clean, healthy olives picked very early to maximise polyphenols, despite lower oil yield. The producer notes improved milling technique in their second season running their own mill, including refinements to malaxation time, temperature, and processing speed. Flavours include fresh-cut grass, green herbs, tomato leaf, and a solid peppery finish.
