Made from Coratina olives grown in Italy, this is a medium intensity oil is milled in November and delivers distinctive flavours of Granny Smith apple peel and arugula with a creamy almond finish and pronounced pepperiness. Laboratory analysis for 2025 (as of yet unseen by EVV) showed 383.7 ppm biophenols, 0.21% free fatty acids and 76.22% oleic acid, while a trained panel rates fruitiness at 5.3, bitterness at 3.3 and pungency at 3.6.
