This early-harvest blend comes from olives grown in Nakai, Kanagawa Prefecture, on the Shonan coast. The fruit is picked and pressed quickly to preserve a fresh, green character with a clean, mild flavour suited to everyday cooking. It works well as a finishing oil for soups, salads and simple dishes.
