Ross Hill Wines produces a limited-release unfiltered Extra Virgin Olive Oil from their estate in Orange, New South Wales. This full-bodied oil showcases distinctive cool-climate characteristics, made from five olive varieties: Frantoio, Correggiola, and Leccino (Italian), offering green, herbaceous notes and a light fruity finish; and Manzanillo and Arbequina (Spanish), adding robust, nutty flavours.

The olives are handpicked and cold pressed to ensure quality. The oil features a deep golden colour with aromas of cut grass, leading to a full-bodied taste and peppery finish.

Bottled on-site at the Ross Hill winery, this Extra Virgin Olive Oil is available exclusively through their Cellar Door and online shop.

As of 2025, this product is no longer in production.

Sensory Profile

Fruitiness 4.7
Fruitiness refers to the aroma and taste of fresh, ripe or green olives in the oil.
Bitterness 3.4
Bitterness is a positive sensory attribute of an EVOO. It can also signal the presence of phenolic compounds.
Pungency 3.5
Pungency is the pleasant peppery or spicy sensation experienced at the back of the throat when tasting olive oil.
Polyphenols 5.8
Polyphenols are naturally occurring compounds found in olives and other plants. In olive oil, reported phenolic content is a chemistry measure that can be associated with bitterness, pungency and oxidative stability; total phenols are not interchangeable with hydroxytyrosol-plus-derivatives measurement used for the EU-authorised wording.
