Pukara Estate Novello

Novello is the first oil Pukara Estate has released from a field blend, named for the Italian word for new and taken from the first pressing of the 2026 harvest. The olives were harvested, cold pressed and bottled between mid- and late April 2026, pressed within hours of picking and bottled in clear glass so the oil stays unfiltered and unsettled. Tasting notes call it vibrant and fresh with depth and character, so try it with grilled vegetables. The 2026 run was limited to just 1,500 bottles, selling out in weeks.
