Olivaia Block X Heirloom Extra Virgin Olive Oil

From century-old trees in Lindsay's historic Block X grove, this heirloom blend unites Manzanillo, Mission, Sevillano and other original California varieties hand-harvested in October. Giulio Zavolta selects the varying mix for ripeness and sensory profile, yielding an oil marked by green olive, grass, green banana, nutty, green tea and eucalyptus notes with medium-to-robust pungency and astringency. The small-batch December release is purposeful as the family aims for a fruit-forward character oil, suited to finishing dishes.
