It features notes of fresh grass, medium-ripe tomato, sage, and oregano. This oil excels with bean, ceps, and fish soups, tartare, boiled red meat and fish, vegetable pasta, and curd cheese or fresh cheese emulsified with honey. It also pairs beautifully with blue cheese and fresh figs.
