Istarska Bjelica is a varietal extra virgin olive oil with pronounced bitterness and spiciness. It exhibits a golden-green colour, medium density, and an intense fruity aroma of green olive fruit, freshly mown grass, and aromatic herbs. The taste delivers a short-lived intense bitterness and lingering spiciness, evoking green almond, wild asparagus, and rocket. It pairs excellently with game and red meats, tuna and salmon dishes, and desserts with mascarpone, vanilla, lemon, and lavender.
