Cold-extracted within hours of harvest, this medium-profile oil presents aromas of fresh cut grass, tomato leaf, artichoke, and herbaceous notes. Balanced bitterness and pungency, with high mono-unsaturated fat content. Suitable for finishing dishes and general culinary use.
