This limited ichigo-ichie bottling is a single-date, single-variety extra virgin olive oil made from 100% Mission olives harvested and milled in Etajima, Hiroshima. It was produced from early-picked green fruit, filtered naturally through paper, and pressed within 9 hours of harvest.
It's described it as a dense green, highly stimulating oil with intense bitterness and pungency. Tasting notes mention fresh grassy aromas, matcha-like bitterness and a spicy finish, with suggested uses including grilled fish, meat dishes, citrus, and natto where the oil acts more like a finishing seasoning than a general cooking oil.
