Mate Novum is an intense fruity extra virgin olive oil crafted from Frantoio and Bianchera olives, harvested from 1st to 3rd October 2025 in Zambratija, Croatia. Bottled in the first days of pressing, it reveals a bright green colour and captivating aromas of fresh almond and wild herbs. Vibrant fresh notes on the palate give way to balanced bitterness and spiciness, perfect for savouring pure or enhancing dishes.
