"The oil is exceptionally fresh and distinctly green in character, with medium aromatic intensity. Green bean is the dominant note, supported by green capsicum, fresh green almond and a delicate white-blossom aroma. The palate is oily and rich, with medium-high green fruitiness, almost no bitterness and high pungency. The pepperiness is strongest across the tongue before extending into the throat, producing a persistent oleocanthal warmth without becoming harsh. The finish is medium to long, leaving traces of white blossom, green almond and lingering pepper. Despite its pronounced pungency, the oil feels harmonious and well balanced, though it will appeal most to people who enjoy assertive, spicy oils."

A premium certified biodynamic, organic, certified regenerative, cold pressed and unfiltered Extra Virgin Olive Oil. Produced from dry land (not irrigated) trees which typically results in a much lower quantity of oil but enhances the flavor. This exceptional oil has been awarded 4 consecutive gold medals and was judged as the best extra virgin olive oil in Victoria in 2021. The 2L cask comes with a tap to seal in freshness by eliminating the ingress of air, maintaining quality for much longer.

Producer Notes

The 2026 harvest was released straight off the press, so the unfiltered oil may appear cloudy from fine olive particles suspended in the oil. The season began with a dry spring, received useful rain just before flowering, then turned very dry through summer and autumn; the dryland grove produced an ...

"Clear gold with a green tinge, this oil presents fresh, herbaceous aromas of cut grass and artichoke, accented by notes of almond. The palate offers a clean, creamy texture with distinct green olive flavors. It finishes with medium-to-strong pungency and very low bitterness."

Phenols
417 mg/kg
Polyphenols are naturally occurring compounds found in olives and other plants. In olive oil, reported phenolic content is a chemistry measure that can be associated with bitterness, pungency and oxidative stability; total phenols are not interchangeable with hydroxytyrosol-plus-derivatives measurement used for the EU-authorised wording.
This reported total-phenol result is not the hydroxytyrosol-plus-derivatives measurement used to assess the EU-authorised olive-oil wording.
FFA
0.15%
Free fatty acids measure the breakdown of fats in oil. Lower FFA values indicate quality and freshness.
Peroxide
3.9
Peroxide value measures the primary oxidation of an oil. A lower peroxide value is better.
