Cold-extracted below 27°C and left unfiltered, it boasts an exceptionally low acidity of 0.2%, preserving its natural antioxidants, vibrant aroma and depth of flavour. Expect expressive notes of fresh-cut grass, green olive leaf and artichoke, followed by a balanced bitterness and gentle peppery finish.
