Hunter's Dream Signature Extra Virgin Olive Oil is produced in the Hunter Valley from olives grown at the Hillston Estate. This premium oil is created from a blend of Frantoio, Coratina, Leccino, and Pendolino varieties, which were originally sourced from Umbria, Italy. The estate's initial grove of 1,600 trees has expanded to 190,000 trees by the turn of the millennium.

The olives are harvested at optimum ripeness and cold-pressed within hours of picking to preserve their fresh characteristics and reported chemistry. Using the latest farming and pressing techniques, the estate ensures consistent quality in each batch. The final product is lab-tested and certified as extra virgin olive oil.
