Olives are sourced from Grove 2 in Stony Creek, South Gippsland, planted in 2005 under windy conditions conducive to robust growth. Harvested olives are processed onsite within 2–3 hours of picking, ensuring freshness.

Tasting notes include delicate aromas of snow pea, red apple peel, fine herbs, and malt biscuits, transferring to a light, watery palate with balanced bitterness and a building chilli-heat finish. Moderate length.
