Signature Organic is the grove's early-harvest blend of green and turning-purple Bouquettier, Mission and Verdale olives. The heritage trees are dryland farmed without irrigation and the fruit is pressed on the property soon after harvest. The oil is unfiltered, unrefined and hand bottled in small batches.

The 2026 release has a reportedly low free fatty acidity of 0.17% and total biophenols of 316 mg/kg. The oil itself is balanced and fresh, with fruity and herbaceous aromas, a smooth mouthfeel and gentle peppery finish.
