Pressed from the rare Benito and Verdale olive cultivars grown on heritage trees at the foot of Victoria's Grampians, this late-harvest oil is cold extracted from purple ripe fruit and remains unfiltered. The nose offers fresh grass, tomato leaf, lemon verbena and basil, while the palate shows sweet red fruit and green tomato with gentle bitterness and a clean, peppery finish. Certified organic with 222 mg/kg polyphenols and just 0.16% free acidity on account of the family's dryland farming (using natural rainfall alone).
