Olives are hand-picked at the first sign of ripening and cold-milled on-site within 90 minutes to preserve freshness, balance, and high polyphenols, meeting strict COOC standards for extra virgin quality. Certified by the California Olive Oil Council and Regenerative Organic Certified by CCOF, it's perfect as a finishing oil... drizzle over salads, vegetables, or vanilla bean ice cream with Fleur de Sel, or use in vinaigrettes and for bread dipping.
