Chiavalon Romano Extra Virgin Olive Oil, produced in Vodnjan, Istria, at altitudes of 80-180 metres above sea level. Made from Vodnjan Buža, Rožinjola, Crnica and Istarska Bijelica olive varieties. Harvested in October using a combination of manual and pneumatic hand shakers. Processed immediately after harvest in a two-phase continuous cycle at a maximum temperature of 24°C. Golden green colour with pronounced density. Clear and rounded aroma rich in medium-ripe tomato, banana and apple, with basil and artichoke notes. Mild taste with gentle spicy and bitter notes. Suitable for fish dishes, particularly fish carpaccio, mixed vegetable salads, cooked and grilled vegetables.
