Organic extra virgin olive oil from certified organic production. Harvested in October 2024 from a blend of vodnjanska buža, crnica, istarska bijelica, rožinjola and moražola olives grown in Vodnjan, Istria, at 80-180 m above sea level. Harvested by combined manual and pneumatic hand shaker methods, then cold-pressed in a continuous two-phase system at a maximum of 24°C immediately after harvest. Intense green colour with pronounced density. Aroma features notes of wild chicory, green apple, artichoke, freshly mown grass and tomato, with balsamic tones of mint, rosemary and sage, and almond. Taste shows balanced spiciness and bitterness.
