Chiavalon Organic blends Vodnjan Buža, Crnica, Istarska Bjelica, Rožinjola and Moražola olives from the family's certified organic groves near Vodnjan in Istria, at 80 to 180 metres altitude. The October harvest is processed immediately in a continuous two-phase cycle at up to 24°C, yielding a strong green oil with refined aromas of wild chicory, green apple, artichoke, freshly cut grass and tomato, layered with balsamic mint, rosemary and sage notes and a pronounced almond character. On the palate it shows balanced, pronounced pungency and bitterness.
