Chiavalon Mlado is an early harvest blend of Leccino and Istarska Bjelica olives grown near Vodnjan in Istria at ~160 metres altitude. The olives are picked by hand and pneumatic harvesters over the first three days of October and cold extracted within hours at below 24°C. The oil shows an intense, refined aroma of artichoke, fresh cut grass, aromatic herbs, green apple and tomato, with balanced bitterness and pungency.
