Extra virgin olive oil from an early harvest in Istria, produced in Vodnjan at 160 m above sea level. Blend of Leccino, Istrska bjelica, and Rožinjola olives, harvested manually and with pneumatic hand shakers on 5, 6, and 7 October. Processed immediately using a two-phase continuous cycle at a maximum temperature of 24°C. Golden green colour with pronounced density. Intense, refined aroma featuring green and fruity notes of green olive, freshly mown grass, green almond skin, lime peel, rocket, basil, tomato leaf, and aromatic herbs. Strong pungency and bitterness.
