Chiavalon Istra Extra Virgin Olive Oil is a 2024 harvest blend from the Istra region, produced in Vodnjan at altitudes of 80-180 m above sea level. It holds certificates for Istrian origin and organic farming. The blend comprises vodnjanska buža, crnica, istarska bijelica, and rožinjola olives, harvested in November using a combination of manual and pneumatic hand shakers. Processing occurs immediately via a continuous two-phase system at a maximum temperature of 24°C, resulting in pronounced density and intense green colour.

Aroma notes include green olive fruit, tomato leaves, basil, artichoke, dandelion, green grass, green banana peel and fruit, and green apple. Taste features prolonged spiciness lasting in the throat, balanced with bitterness that spreads throughout the mouth and persists.
