Chiavalon Ex Albis Extra Virgin Olive Oil

Chiavalon Ex Albis extra virgin olive oil is a blend from Istria, produced in Vodnjan at 80-180 m above sea level. It combines Vodnjan Buža, Crnica, Istrian Bijelica, Rožinjola and Moražola olives, harvested in October by hand and pneumatic shakers. Processing occurs immediately after harvest in a continuous two-phase system at a maximum of 24°C.

The oil has an intense green colour and pronounced density. Its aroma features notes of wild chicory, green apple, artichoke, freshly mown grass and tomato, with balsamic tones of mint, rosemary, sage and almond. The taste shows balanced bitterness and pungency.
