Chiavalon Atilio is an extra virgin olive oil blend from Istria, produced in Vodnjan at altitudes of 80–180 m above sea level. It combines Crnica and Istarska Bijelica olives, harvested in October 2024 using a mix of manual and pneumatic hand shakers. The olives undergo immediate processing in a two-phase continuous cycle at a maximum temperature of 24°C, resulting in a full-bodied oil with golden-green colour.
The aroma features notes of artichoke, chicory, rosemary, and mint. The taste is strong, with black pepper and almond flavours, alongside pronounced bitterness and pungency. It pairs with meat dishes, particularly grilled steaks, and desserts such as dark chocolate cake.
