Bilini extra virgin olive oil originates from Istria, Croatia, and results from 25 years of olive grove cultivation by the Rakovac family. Produced from predominantly Leccino, Buza, Istarska Bjelica, Frantoio and Pendolino varieties among the 14 different cultivars grown by Bilini on their estate. Harvest is timed to ensure peak ripeness and lately harvest has been shifting earlier - possibly due to climate change.
