Avistria's Istarska Bjelica 2025 is a single-varietal extra virgin olive oil from the autochthonous Istarska Bjelica cultivar grown on Istria's deep red soils. The olives are harvested early by hand and with hand-shakers, then milled swiftly and gently to preserve aromas of artichoke, herbs, green grass and almond. The oil shows pronounced fruitiness, distinct bitterness and a peppery finish, with very low acidity and high polyphenol and vitamin E levels.
