Al Torcio Rossignola - extra virgin olive oil is a monovarietal produced in Istria from the Rosulja olive variety. It appears clear with an intense golden yellow colour and green tones. The aroma is strong and complex, featuring notes of artichoke, freshly mown grass, and balsamic tones of mint, basil, and oregano. The taste includes vegetable notes of unripe tomato, with finishing notes of celery and green almond, accompanied by strong bitterness and restrained pungency. It pairs with grilled red radicchio, beef carpaccio with truffles, vegetable soups, pasta with cuttlefish and shellfish, baked fish, baked red meat, and hard mature cheeses.
