The aroma is abundant and strong, featuring complex fruity notes of medium-ripe tomato, lettuce, freshly mown grass, and unripe banana.
The taste is balsamic, with notes of mint, basil, oregano, and particularly sage; it is gentle and harmonious, accompanied by fruity tomato and almond notes. Bitterness and pungency are decisive yet balanced.
It pairs with raw meat carpaccio with truffles, grilled blue fish, bean pastas, pasta with crayfish, spicy fish in umido, grilled red meat and game, and hard mature cheeses.
