This freshly pressed oil uses olives grown in Hiroshima Prefecture, with varieties including Lecca, Frantoio and Mission, though the exact blend changes with each harvest date. The olives are hand-picked and pressed the same day at the Etajima Olive Factory using low-temperature centrifugation and pressure filtration. It has a fresh, green character, with later lots leaning towards riper golden fruit and mellow sweetness, and suits vegetables, fish, carpaccio, steak, pasta or bread.
