43 Ranch Picual

Milled at 43 Ranch in San Ardo, California, this oil comes from the Picual cultivar. Olives are hand picked in the cool morning air (to prevent oxidation and fermentation) and cold-pressed within hours, then warehoused in a climate controlled dark room for the rest of the processing/settling. The aroma leads with tomato leaf and grass. In the mouth it is robust and predominantly green, with leafy and grassy notes joined by ripe nut and tropical fruit, good bitterness and a long peppery finish - and it is at its best on tomato dishes.
